PatchCooks: Readers Share Go-To Weekend Breakfast Recipes

When I was a new mom, I had images of laid-back weekend mornings cooking elaborate breakfasts ofĀ bacon, eggs, fresh-squeezed juice, the works.Ā 

Perhaps even dabbing the little one’s nose with a bit of homemade pancake batter while they cutely (and neatly, ha ha) whisked away at my side. So homey! So virtuous!Ā So...not happening.

Now I just pray everyone will sleepĀ really late.

Weekend mode meansĀ keep the cold cereal in an obvious spot on the counter and hold the belief six is plenty old enough to pour your own milk. (She’s quite handy, that kid.)Ā 

But I still have days where images of motherly perfection creep back in, especially once September comes.Ā Curious if I was alone in my autumnal return to the hearth, I asked Patch readers for their best weekend breakfastĀ ideas.Ā

Stephanie West Stellwagen and Lauren Ayres of Greenwich, CTĀ both decided to take onĀ the humble egg:Ā Lauren gives us a decadent frittata that also manages to use up leftoversĀ (score!) while Stephanie goes a little lighter with egg whites and almond milk.Ā 

Laura Crosbie of Hazlet, NJĀ shares herĀ "Cupcake Omelets." They freeze great andĀ can take you right into the work week.Ā Ā 

And what would a recipe round-up be without Nutella? For that we can thank Amanda Bloodgood, also of New Jersey, by way of Freehold and Jackson.Ā
