Roma's Italian Restaurant, Old Walker Grant School

Critical Violations: 4

• "Observed several dented cans on shelving units in the rear dry storage area."
• "Observed shell eggs stored over ready-to-eat (RTE) food in the refrigeration unit." (Corrected during inspection)
• "Toxic chemical containers are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items. Observed can of rubber 'flex seal' stored with food storage containers in rear storage area and spray bottle of '409' stored on shelving unit with food product in walk in cooler." (Corrected during inspection)
• "The food contact surface of the plastic liners covering cooked pizza dough in the walk in freezer is not safe."

• "Hot water dish machine not sanitizing-Wash water did not reach 160'F and rinse water did not reach 180'F."
• "The ready-to-eat (RTE) commercially processed turkey-ham in the refrigeration unit was not properly dated for disposition after opening. Operator advised that the package was opened 4 days ago." (Corrected during inspection)
• "The food contact surface of the EQUIPMENT is not safe. Observed bags of onions stored in a black trash bag in the 3 door RIF." (Corrected during inpsection)
