Manassas Restaurant Inspections: Grease On Walls, Encrusted Debris
Health inspectors found as many as 11 violations during recent inspections in Manassas and western Prince William County.
MANASSAS, VA — Some restaurants in the Manassas area recorded violations during recent health department inspections between April 10 and April 25.
Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.
For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

Here are the most recent inspections from the Manassas area, according to the Prince William Health District. One notable inspection was at Pizza Hut, where inspectors found grease dripping down walls, encrusted dirt and debris around the the walk-in cooler and grease deposits on pizza trays. Restaurants with the most violations (11) were Lorena's Deli, Breakers Korean BBQ, Pho Nucuoi Saigon and Asian Garden.

- There was no temperature measuring device located in the True two-door reach-in cooler.
- Food (e.g., beans, flour, cans of spices) stored in a location (in the hallways leading to the bathroom) where it is subject to splash, dust or other contamination.
- Food (pupusas in the Frigidaire one-door reach-in cooler) stored in a location where it is subject to splash, dust or other contamination as follows: wrapped in nonfood grade black garbage bags, subject to environmental contamination from bags.
- Observed pots and bowls on the equipment rack in front of the kitchen door that have been cleaned not stored covered or inverted.
- The following nonfood contact surface were observed to be rusty: the table adjacent to the three-compartment sink and the chest underneath of the table.
- There is no chemical sanitizing test kit present to ensure the chemical sanitizing solution (chlorine) used is at the proper concentration.
- The floor around the cooking equipment is not smooth, durable, easily cleanable, and/or nonabsorbent. The floor was observed to have many cracks and holes in it.

- Different types of raw animal foods stored in such a manner that may cause cross contamination to other raw animal foods and to RTE foods. Raw eel, raw tuna, and raw salmon were stored together in the same bin in the reach-in cooler at the sushi bar.
- Unwrapped or uncovered food (egg rolls) in the walk-in freezer.
- Raw animal food (raw tuna, raw salmon, raw eel, and raw eggs) stored over and adjacent to ready-to-eat food (salad mix, cut cucumbers, and cooked shrimp) in the refrigeration unit (reach-in cooler at sushi bar and walk-in cooler).
- The food-contact surface of the meat slicer is not cleaned at an appropriate frequency. The meat slicer was observed dirty and uncovered between use.
- Cut lettuce, carrots, and red cabbage mix were cold holding in the reach-in cooler at the sushi bar at an improper temperature (49 degrees Fahrenheit). The cut lettuce, carrots, and red cabbage mix was prepared one hour at the time of the inspection.
- The date marking system for prepared ready-to-eat (RTE) raw salmon, raw tuna, and cooked shrimp in the reach-in cooler at the sushi bar is not in proper use.
- The following raw and/or undercooked foods are provided on the menu without proper disclosure: all items under "Japanese Lunch Special," "Entree from Sushi Bar," and the following items under "Appetizers": "Tuna Tataki," "Ahi Tuna Sashimi," "Sushi," and "Sashimi."
- The Person in Charge could not provide a food temperature measuring device for the reach-in cooler at the sushi bar.
- Unlabeled food containers with the following food items that are not easily identified by appearance: uncooked white rice.
