Prince William Restaurant Inspections: 5 Locations Cited

Five different restaurants around Prince William County needed corrections after recent visits from the Prince William Health District.

PRINCE WILLIAM COUNTY, VA — Five restaurants around Prince William County were cited with corrective actions after recent inspections from the Prince William Health District. The locations were inspected between Nov. 1 and Nov. 9.

Though some coronavirus restrictions continue to fluctuate around the state, health inspectors are returning to conduct many restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department also performs a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

      • Water from the handwashing sink at was measured at a temperature less than 100°F. Observed at 95*F.

      • There was no temperature measuring device located in the following cold or hot holding equipment: Centaur Prep Cooler - left.
      • The wash temperature of the high temperature sanitizing ware wash machine is not meeting the manufacturer's specifications. The minimum temperature of 160*F on the Thermolabel was not achieved after 3 wash cycles.

      • Provide or install paper towels dispenser (with disposable paper towels), soap dispenser (with soap), handwashing signs and trash containers at all handwashing sinks.
      • Install mops hooks/racks at the mop sink for proper mops storage/air dry.
      • Provide ambient temperature thermometer at all cold holding units (refrigerators).
      • Install all nine exhaust hood system missing light bulbs
      • Remove or repair the front area not working 3 doors refrigerator
      • Provide additional adequate dry storage with approved shelving, (easily cleanable, durable and corrosion resistant), for the storage of food, single-service and single-use articles and linen. Items must be stored 6” off the floor.

      • The mechanical dishwasher machine should have incorporate a visual or audible alarm to signal if the detergents and sanitizers are not delivered to the respective washing and sanitizing cycles
      • Remove the floor wooden structure holding the dishwasher machine and replaced with an approved non absorbent, easy to clean, smooth and resistant material.
      • Provide an approved air gap at the ice machine draining pipe and the flood level rim. The air gap shall be at least twice the diameter of the water supply inlet and shall not be less than one inch.
