Patch's Tavern: Flank Steak Pinwheels
This dish is sure to be a huge hit when you want to impress friends and family.

Every week a group of us get together for dinner at a friend's house. Most of the time, a friend of ours who was a sous chef and is still a fantastic cook does the cooking. Once in a while someone else will cook. Two or so weeks ago my friend, Annette and I decided to make the meal for the group.
So what does one make to please eight people? Annette and I started to look through some recipes. We were looking for that recipe that would sweep everyone off their feet and impress their palettes. We came across the flank steak pinwheel recipe that looked very interesting.
Flank steak, is also known as asbavette, is a beef steak cut from the abdodminal muscles of the cow. It is a relatively long and flat cut of meat. Unfortunately we could not find flank steak at the local grocery, but found it at Costco.

This recipe takes a bit of work, but it was well worth it. You need to marinate the steak overnight, so a bit of preparation is requied.
This dish was absolutely incredible. It was very tender and quite flavorful. There was so much flavor in every bite, and the steak was so juicy and tasty. The combination of the marinade, spinach, onion and feta cheese made this a delicious and impressive flank steak recipe that was a huge hit.

Everyone was so impressed with the presentation and had fun seeing what each pinwheel looked like inside. This was one of the best recipes that we found for flank steak and is now a favorite. You can even make the marinade for shrimp. We served the pinwheels with mashed potatoes and cooked spinach. This is a great dinner party dish that will impress family and friends. So get into the kitchen and start getting creative.

Ingredients

1/4 cup olive oil
1/4 cup soy sauce
1/4 cup red wine
1/4 cup Worcestershire sauce
1 tablespoon Dijon mustard
1 tablespoon lemon juice
2 clove garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon ground black pepper

1 1/2 pounds flank steak, pounded to 1/2 inch thickness

2 clove garlic, peeled

1/4 teaspoon salt

1/4 cup chopped onion

1 cup frozen chopped spinach, thawed and squeezed dry

1/2 cup crumbled feta cheese
Preparation
In a plastic gallon Ziploc bag, combine olive oil, soy sauce, red wine, Worcestershire sauce, mustard, lemon juice, 1 clove of garlic, and Italian seasoning and pepper. Squeeze the bag to blend well. Pierce the flank steak with a knife, making small slits about 1 inch apart. Place the steak into the bag, and seal. Refrigerate overnight to marinate.
Preheat the oven to 350 degrees. Crush the remaining clove of garlic on a cutting board with a large chef's knife. Sprinkle the salt over the garlic, and scrape with the blunt side of the knife to make a paste.
Remove the steak from the bag, and discard marinade. Spread the garlic paste over the top side of the steak. Place layers of chopped onion, spinach, and cheese over the garlic.
Roll the steak up lengthwise (as tight as you can), and secure with kitchen twine. Place the roll in a shallow glass baking dish. Bake uncovered for 1 hour in the preheated oven, or until the internal temperature of the roll is at least 145 degrees F in the center. Let stand for 5 minutes to set, and then slice into 1-inch slices to serve. Serve with mashed potatoes and favorite vegetable. Serves 6.
