Cooper's Hawk Winery In Reston Has 7 Health Violations In First Inspection

Reston's huge new restaurant on Sunset Hills Road just opened in late August, and they had their first inspection Sept. 18.

RESTON, VA -- Cooper's Hawk Winery & Restaurants caused quite the stir when they opened a location at 12130 Sunset Hills Road in Reston on Aug. 28, bringing 200 new jobs to Fairfax County. But its first health inspection could've gone better.

Fairfax County health inspectors recorded seven violations at the restaurant during their Sept. 18 visit, three of them critical and four non-critical.

Two of the critical violations were corrected during the inspection, and inspectors reported that the staff would fix the third one within 10 business days.

The non-critical violations had to do with paperwork and test kits.

The Cooper's Hawk in Reston is the 30th by the chain, which spans eight states and has locations in Richmond and Ashburn.

"Cooper's Hawk has created a modern, casual dining experience with warm service and a menu created with its own handcrafted wines in mind," according to their website. "The menu features unique dishes with bin numbers listed next to each item on the menu, guiding guests to their selection’s perfect wine match. Signature dishes include: Ahi Tuna Tacos, Red Wine Braised Short Ribs, Shrimp Campanelle, and Ooey Gooey Butter Cake."

The violations listed by Fairfax County are posted below:

Critical violation: Observation (CORRECTED DURING INSPECTION): The following food item(s) for which time rather than temperature is used as a control is not marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control: 1. Butter and garlic at the rails.

Critical violation: Observation: Observed a "splitter" attached to the mop sink faucet fixture.

Critical violation: Observation (CORRECTED DURING INSPECTION): Working containers of poisonous and toxic materials are not properly labeled with a common name.

Non-critical violation: Observation: The following farm-raised fish served raw or partially cooked were observed without a written statement from the supplier stating that the fish were raised and fed according to 3-402.11(B)(3): 1. Salmon items.

Non-critical violation: Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions used at the BAR dish machines and BAR 3-vat sinks.

Non-critical violation: Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.

Non-critical violation: Observation (CORRECTED DURING INSPECTION): Observed that sign or poster that notifies food employees to wash their hands is not provided at one BAR hand sink used by food employees.
