Dead Roaches Found At Vienna Restaurant: See Recent Health Inspections
Health inspectors found dead roaches and numerous other violations at one restaurant during May inspections.
VIENNA, VA — With Fairfax County Health Department's restaurant inspection reports back online, we continue to look at reports in the Town of Vienna.
The health department's environmental health staff inspect over 5,200 restaurants and other retail food service establishments in Fairfax County and cities of Falls Church and Fairfax to ensure safe food handling practices are followed. This includes proper sanitation, food storage and preparation, and adequate kitchen facilities. Aside from restaurants, staff inspect child care centers, hospitals, school cafeterias, and temporary food service vendors at festivals.
Until summer 2022, food establishment inspection reports had been unavailable online since 2019 as the health department worked to launch a new online system. Residents can now search for a specific restaurant or browse a map of inspected locations through the online database.

The health department cautions residents that multiple inspection reports should be used to evaluate a restaurant rather than a single report.
This week's report focuses on May reports around the Town of Vienna. One notable report was at Big Buns, where health inspectors found dead roaches. Inspectors recommended pest control and removal of dead pests, and a follow-up inspection was scheduled. The follow-up inspection results have not yet been shared to the health department's database.

- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: whole milk = 46F.
- Outside refuse container was uncovered. Containers were observed overloaded/overfilled and lids not tightly fitted.
- The quantity of refuse exceeded the storage capacity of the exterior storage enclosure.
- The refuse containers for the storage of waste are not rodent or pest proof. Visible signs of rodent or bird access and chew markings were noted during the inspect ion at the outside storage area observed. Waste spills were observed around these containers.

- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: quinoa =44F.
- Methods are not being used to control pests. Roaches are present on premises. Effective methods to maintain the premises free of pest are not being applied.
- There is no Certified Food Manager present at the beginning of the inspection.
- The following methods used for cooling were not adequate to facilitate proper cooling: large amounts of foods tightly packed in food containers.
- Observed that the floor under refrigeration units and behind the hot water heater and other stations equipment is in need of cleaning.
- Dead roaches were found on the premises. Lots of dead roaches were noted on sticky board behind a refrigerator and the hot water heater. Dead roaches were also noted on the floor in this area.
- Dispensing and/or in-use utensils improperly stored between use as follows: Ice scoop found in the ice machine with the handle in direct contact with the ice. Measuring scoops on foods were found placed on the foods with the handle laying on the foods.
- Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.
