Paris is a diverse city and, like the rest of France, it is struggling to hang on to whatever it is that makes it resolutely “French.” French cuisine has suffered some well-documented blows. Most cooks in Paris don’t shop for ingredients with a recipe in mind, but rather let what they find at the market determine the menu.
