Vienna Restaurant Inspections: 2 Places With 9 Violations Each
During September inspections by the Fairfax County Health Department, Vienna restaurants had as many as nine violations.
VIENNA, VA — As the Fairfax County Health Department regularly inspects restaurants in the Town of Vienna, we continue to look at the latest inspection results.
The health department's environmental health staff inspect over 5,200 restaurants and other retail food service establishments in Fairfax County and cities of Falls Church and Fairfax to ensure safe food handling practices are followed. This includes proper sanitation, food storage and preparation, and adequate kitchen facilities. Aside from restaurants, staff inspect child care centers, hospitals, school cafeterias, and temporary food service vendors at festivals.
Residents can search for a specific restaurant or browse a map of inspected locations through the online database. The health department cautions residents that multiple inspection reports should be used to evaluate a restaurant rather than a single report.

This week's report focuses on September reports around the Town of Vienna. Of note, Pizza Vienna and Anita's New Mexican Style Food had nine violations each.

- The following fish offered for service or sale in the ready-to-eat form was not frozen to ensure parasite destruction: salmon, yellow tail, fish egg.
- When tested, the chlorine-based sanitizing solution was observed to be at a concentration less than what is required for effective sanitization of food-contact surfaces of equipment and utensils. Observed the sanitizing solution in the dishmachine with a concentration of 0 ppm total chlorine.
- Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete.

- Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete.
- When tested, the low temperature, chemical sanitizing warewashing machine was observed with a sanitizing rinse concentration of less than 50 ppm chlorine solution. Observed chlorine concentration was noted to be zero ppm.
- The following raw and/or undercooked foods are provided on the menu, menu board, table tent or brochure without proper disclosure: Steak Frites.

Ledo Pizza: 141 Park St., Vienna, Va 22180
Last inspection: Sept. 19
- The exterior surfaces of the mechanical warewashing machine are soiled with food debris.
- Observed that the floor under type deep fryer is in need of cleaning. Grease accumulation was noted in this area.
- Observed that inadequate lighting was provided in the food preparation areas. Several light bulbs under the hood located above stove, deep fryer, ands grill are burned out. Also, several light bulbs under the hood located above the pizza oven are burned out.
- Food stored on the floor and/or food stored less than 6 inches off the floor inside the walk-in refrigerator.
- There is no cover to the feminine napkin refuse container in the ladies room stall.
- The following utensil was observed in a state of repair and condition preventing effective maintenance and cleaning/sanitization: spatulas with blue handles. The handles are in disrepair.

- The interior and exterior surfaces of the mechanical warewashing machine are soiled with (limescale) that may decrease the effectiveness of the unit.
Pizza Vienna: 235 Maple Ave., Vienna, Va 22180

- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: tzatziki sauce.
- Observed that paper towels were not provided at each handwashing sink. Paper towels are missing at the back/ware washing station hand washing sink.
- There is no Certified Food Manager present at the beginning of the inspection.
- The certified food manager could not provide a food temperature measuring device.
- The compartments of the 3-compartment sink are not large enough (60-gallon size) to accommodate the largest piece of equipment.
- The following food items that are not easily identified by appearance were observed without a label: Samolina, sugar.
- The compartment(s) of the following warewashing equipment are heavily soiled: the piping system under the 3-compartment sink is soiled a with build-up debris and dirt. The piping drain under this sink is also in need of cleaning.
- Observed that mops are improperly stored between use. A wet mop was found stored in the mop sink no it hung to properly air dry.
- Employees observed working in the food service area without proper hair restraints.

- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: sliced cheese = 60F.
- Opening to the exterior of the building are present along the base of the back door to the kitchen.
- Observed that the floor under shelving in the walk-in freezer is in need of cleaning.
- The refuse container used to store refuse/recyclables has no drain plug.

Anita's New Mexican Style Food: 521 Maple Ave., Vienna, Va 22180
Last inspection: Sept. 13
- Working containers of poisonous and toxic materials are not properly labeled with a common name. Observed unmarked spray b outlets containing toxic chemical solutions without labels to identify contents.
- Observed that the tiles are missing on the wall near the mop sink area.
- Surfaces of can opener blade and badge holder are not being cleaned as required.
- The waste storage container located outside/dumpster is in disrepair. The same of this container is rusted and broken and may allow liquid to runoff.
- Rust due to condensation from the exhaust hood system in the warewashing area was observed.
- Dispensing and/or in-use utensils improperly stored between use as follows: knives stored in between steam table and and prep unit at the cook-line.
- The nonfood-contact surfaces of the following equipment had accumulations of grime and debris: surfaces under the grill at the secondary cooking area that is located near the dish washing station. Grease was noted pooling under the grill.
- Outside refuse container was uncovered. One of the two dumpsters was found opened.
- Observed that the ceiling inside the walk-in refrigerator is in need of cleaning. The rim on the walk-in coolers located downstairs are also in need of cleaning.

- The following refrigerated, ready-to-eat, time/temperature control for safety food that is prepared on site is not used or discarded within 24 hours of preparation and was not observed to be date marked: Coleslaw packed in small containers for individual self service were not date marked.
- The following packaged food item(s) is not properly labeled: Coleslaw.
- Observed that inadequate lighting was provided in the food preparation areas. There it’s no lighting in side the walk-in refrigerator.
- The handsink basin located near the large white chest freezer in the kitchen is slow to drain.
