Vienna Restaurant Inspections: Big Buns, Sushi Yoshi

During November inspections by the Fairfax County Health Department, Vienna restaurants had as many as eight violations.

VIENNA, VA — As the Fairfax County Health Department regularly inspects restaurants in the Town of Vienna, we continue to look at the latest inspection results.

The health department's environmental health staff inspect over 5,200 restaurants and other retail food service establishments in Fairfax County and cities of Falls Church and Fairfax to ensure safe food handling practices are followed. This includes proper sanitation, food storage and preparation, and adequate kitchen facilities. Aside from restaurants, staff inspect child care centers, hospitals, school cafeterias, and temporary food service vendors at festivals.
Residents can search for a specific restaurant or browse a map of inspected locations through the online database. The health department cautions residents that multiple inspection reports should be used to evaluate a restaurant rather than a single report.

Violations:

  • When tested, the low temperature, chemical sanitizing warewashing machine was observed with a sanitizing rinse concentration of less than 50 ppm chlorine solution/(zero ppm).
  • Observed that poisonous and toxic materials are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items. Spray bottles contain ing toxic cleaning chemical solutions were found stored above cleaned utensils in the back room.
  • The following refrigerated, ready-to-eat, time/temperature control for safety food that is commercially processed is not used or discarded within 24 hours of when the original container was opened and is not observed to be date marked: crumbled blue cheese, fresco Mexican cheese, etc.
  • There is no chlorine test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions at the low temperature chemical sanitizing machine.
  • The following utensil was observed in a state of repair and condition preventing the equipment to be used as designed: rubber spatula.
  • The following food items that are not easily identified by appearance were observed without a label: sugar, flour, spices.

Amma Vegetarian Kitchen: 344 Maple Ave., Vienna, Va 22180

  • Unwrapped or uncovered food in the following location where the food is subject to contamination: walk-in refrigerator.

Smoothie King: 258 Maple Ave., Vienna, Va 22180

Chili Wok: 335 Maple Ave., Vienna, Va 22180

Last inspection: Nov. 29

Violations:

  • Raw animal food storage, preparation, holding or display conducted in a manner that may cause cross contamination of ready-to-eat food as follows: raw meat, raw chicken, raw shrimp, raw pork, stored above sauces, inside the walk-in refrigerator.
  • Lockers or other suitable facilities are not provided for employee clothing and other possessions.
  • The following food items that are not easily identified by appearance were observed without a label: salt, sugar, soy sauces, and a variety of other spices on the cook-line cart.
  • Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.

Sushi Yoshi: 101 Church St., Vienna, Va 22180

Violations:

  • Raw animal food storage, preparation, holding or display conducted in a manner that may cause cross contamination of ready-to-eat food as follows: Raw chicken and raw fish found stored above cooked food and vegetables, inside refrigerators.
  • The following food item(s) for which time rather than temperature is used as a control is not marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control: sushi rice.
  • The following equipment/utensils were observed soiled to sight and touch: interior surfaces of reach-in freezers located at the basement are soiled and in need of a thorough cleaning.
  • The following refrigerated, ready-to-eat, time/temperature control for safety food that is prepared on site is not used or discarded within 24 hours of preparation and was not observed to be date marked: cooked fish, brown rice.
  • Boxes of single service utensils were found on the floor in the basement.
  • Observed that some of the ceiling tiles in the dry storage area located in the basement are missing /not maintained in good repair. The light fixtures in the basement dry storage area need to be properly and professionally repaired and secure in place.
  • Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.
  • The following utensil was observed in a state of repair and condition preventing effective maintenance and cleaning/sanitization: cutting board.

Lotus Garden: 224 Maple Ave., Vienna, Va 22180

Last inspection: Nov. 20

Violations:

  • Working containers of poisonous and toxic materials are not properly labeled with a common name. Unmarked spray bottles containing cleaning chemicals were not labeled.
  • The food-contact surfaces of the following equipment and/or utensils are not finished to have a smooth, cleanable surface: chest freezer located at the back work area. A wooden /plywood cover on top of the chest freezer is not easily cleanable and absorbs moisture easily.
  • Observed that the exterior screen on the back door to the kitchen is broken and needs to be repaired or be replaced if it can no longer be repaired.
  • Food stored on the floor and/or food stored less than 6 inches off the floor inside the walk-in cooler & freezer.
  • Observed that the floor under cooking equipment is in need of cleaning.

Burapa Thai and Bar: 226 Maple Ave., Vienna, Va 22180

Violations:

  • The mechanical warewashing machine was not operating in accordance with the manufacturer's specifications.

Hawk & Griffin Public House: 435 Maple Ave., Vienna, Va 22180

Last inspection: Nov. 30

Violations:

  • Observed the following ready-to-eat, time/temperature control for safety food being held for more than the specified time/temperature allowed: A variety of prepared sauces stored on shelves inside walk-in refrigerators.
  • Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.
  • Observed that the floor under the beer dispensers at the bar is in need of cleaning.
