Vienna Restaurant Inspections: Taco Bamba, Magnolia Dessert Bar
During August inspections by the Fairfax County Health Department, some Vienna restaurants had numerous violations. Others had none.
VIENNA, VA — As the Fairfax County Health Department regularly inspects restaurants in the Town of Vienna, we continue to look at the latest inspection results.
The health department's environmental health staff inspect over 5,200 restaurants and other retail food service establishments in Fairfax County and cities of Falls Church and Fairfax to ensure safe food handling practices are followed. This includes proper sanitation, food storage and preparation, and adequate kitchen facilities. Aside from restaurants, staff inspect child care centers, hospitals, school cafeterias, and temporary food service vendors at festivals.
Until summer 2022, food establishment inspection reports had been unavailable online since 2019 as the health department worked to launch a new online system. Residents can now search for a specific restaurant or browse a map of inspected locations through the online database.

The health department cautions residents that multiple inspection reports should be used to evaluate a restaurant rather than a single report.
This week's report focuses on August reports around the Town of Vienna. Of note, Taco Bamba had 10 violations, and Charlie's Bowl and Magnolia Dessert Bar & Coffee had eight violations. On the other hand, MOD Pizza and The Pure Pasty had no violations.

Charlie's Bowl: 521 Maple Ave, Vienna, Va 22180
Last inspection: Aug. 4
- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Birria=45F, chorizo=47F.
- The following food item(s) was not reheated for hot holding within a sufficient time of 2 hours or less: grilled chicken142F after retreating.
- The food temperature measuring device is not accurate in degrees F. The food thermometer is not operating properly.
- The operator is not testing the chemical sanitizing solution to ensure proper concentration of the solution.
- The following equipment/utensils were observed soiled to sight and touch: the interior base of the reach-in refrigerated was spoiled and in need of cleaning. Water was also observed pooling inside this unit.
- Observed that clean a box containing styrofoam containers and aluminum containers was stored on the floor, in a manner that exposed the item(s) to contamination. Some of the styrofoam foam containers on the prep table were stained with food splash.
- Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.
- The following methods used for cooling were not adequate to facilitate proper cooling: food were observed placed in small deep containers for cooling and covered tightly.
Magnolia Dessert Bar & Coffee: 431 Maple Ave, Vienna, Va 22180

- The establishment has not posted the permit to operate in a conspicuous location.
- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: whole milk = 54F, 2% milk=44F.
- Observed the following ready-to-eat, time/temperature control for safety food being held for more than the specified time/temperature allowed: Mayo-pesto mix held more than seven days after preparation at a sister food establishment own by the same owner.
- Observed the hand sink at the front serving/pre station is being used for washing of utensils and food processing.
- The food temperature measuring device was found out of calibration in the range of use. The foods thermometers available are not accurate and need to be calibrated regularly.
- There is no Certified Food Manager present in the establishment.The manager on duty has an expired food sanitation certificate.
- Unwrapped or uncovered food in the following location where the food is subject to contamination: Uncovered food container were noted on shelves in the walk-in refrigerator.
- Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.
MOD Pizza: 168 Maple Ave, Vienna, Va 22180

Taco Bamba: 164 Maple Ave, Vienna, Va 22180

- When tested, the low temperature, chemical sanitizing warewashing machine located at then bar was observed with a sanitizing rinse concentration of less than 50ppm chlorine solution. Chlorine coincidence traction was noted to be zero ppm.
- The following food item(s) were observed hot holding at improper temperatures using a calibrated food temperature measuring device: queso sauce=122F.
- The following refrigerated, ready-to-eat, time/temperature control for safety food that is prepared on site is not used or discarded within 24 hours of preparationand was not observed to be date marked: several small food containers in the walk-in cooler were not properly labeled or date marked. Some of the containers had incorrectlabeled to identify containers and had incorrect dates.
- There is no data plate on the warewashing machine located at the bar. The available data plate has completely faded and not readable.
- The exterior surfaces of the mechanical glassware/warewashing machine located at the bar are soiled with limescale build-up.
- Observed pots and frying pans that have been cleaned not stored properly inverted to allow for air drying.
- The following methods used for cooling were not adequate to facilitate proper cooling: ;large amount of foods in large deep containers.
- The following food items that are not easily identified by appearance were observed without a label: spices and sauces.
- A food employee was observed drinking from an opened cup and without a straw in areas where he may contaminate food, clean equipment, utensils or other items needing protection.
- Employees observed wearing jewelry on their arms and hands while preparing food. Food handlers were observed wearing watches and bracelets.
Don Pollo of Vienna: 146 Maple Ave, Vienna, Va 22180

- The following food item(s) were observed hot holding at improper temperatures using a calibrated food temperature measuring device: fried rice (Chaufa), on steam table.
- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: whole milk=46F, Lactose milk =67F.
- Working containers of poisonous and toxic materials are not properly labeled with a common name. Unmarked spray bottle containing cleaning chemical solution was not labeled.
- There is no Certified Food Manager with a valid food sanitation certificate present in the establishment.
Foster's Grille: 138 A Maple Ave, Vienna, Va 22180

- Observed the following ready-to-eat, time/temperature control for safety food being held for more than the specified time/temperature allowed: portioned ranch dressing in walk-in cooler.
- Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.
- Food stored on the floor and/or food stored less than 6 inches off the floor.
- Observed that the floor inside the walk-in cooler is rusted.

- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: half & half=43F @ beer cooler, thousand Island dressing @ beer cooler=47F, portioned raw meat=44F@ beer cooler.
- Food stored on the floor and/or food stored less than 6 inches off the floor. Observed container and bags of food store stored directly on the floor in the walk-in refrigerator.
- Employees observed wearing jewelry on their arms and hands while preparing food. Observed employees were watches, bracelets on their arms while preparing foods.
- The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41F: The reach-in beer cooler is not maintaining animal foods at 41F or Lower.
- Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counters, prep tables and on equipment in-between uses.
- The nonfood-contact surfaces of the following equipment were observed soiled with an accumulation of dust, dirt, food residue, and/or other debris: The cavity of the microwave oven observed soiled and in need of cleaning.

- Observed that the floor drain covers are not secure at the mop sink and dishwashing station.

- The following methods used for cooling were not adequate to facilitate proper cooling: containers closed tightly during cooling and stacked, preventing rapid cooling.
- There is no covered refuse container for the disposal of feminine napkins in the ladies room stall.
- Observed that the floor under storage shelving inside the walk-in freezer is in need of cleaning.

- Observed that the walk-in freezer has excessive ice build-up and door not able to close tightly.
- The following utensil was observed in a state of repair and condition preventing effective maintenance and cleaning/sanitization: Several pizza rubber tub lids/covers are broken.

- Surfaces of the can opener blade were in contact with non-time/temperature control for safety food items that were observed soiled with accumulations of grimeand debris.
