Woodbridge Restaurant Inspections: Pizza Hut, Buffalo Philly's
The Prince William Health District inspected several facilities around eastern Prince William County during recent visits.
WOODBRIDGE, VA — Several facilities from eastern Prince William County recorded violations during the most recent round of health department inspections from May 31 to June 5.
Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- Total violations: 6
- There is no person in charge with a valid Food Protection Manager Certification from an accredited agency recognized by the Conference for Food Protection.
- This food establishment has not established procedures for cleaning up vomiting or diarrheal events that happen in the facility (Corrected during the inspection: The person in charge posted the vomiting and diarrhea clean up procedures in the kitchen).
- The following food item(s) is observed to be unsound or adulterated: Observed a dented can of chili and beans on the shelves of the dry storage).
- Observed cooked spicy chicken without proper date of disposition. (Corrected during the inspection: The person in charge discarded the spicy chicken voluntarily).
- The certified food manager could not provide a food temperature measuring device.
- Employees observed working in the food service area without proper hair restraints.

- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: raw pork and chicken, in Turbo Air 2 drawer refrigerator @ 46 and 44 degrees F, respectively; shredded cheese and sour cream on the top left side of the Supera 3 door prep reach-in refrigerator @ 45 and 47 degrees F, respectively.
- Containers of foods found stored on the floor in the kitchen.
- Scoop for rice was observed to be improperly stored in between usage in standing water at room temperature; tongs along cookline were found hanging on oven door.
- Single use plastic soup containers found washed and ready for re-use.
- The following pieces of equipment were found in disrepair and/or not holding an ambient air temperature of 41 degrees F or below: the Turbo Air 2 drawer refrigerator @ 47 degrees F; True 2 door prep refrigerator with a leak inside.
- The bottom shelves of two prep tables in the kitchen are rusted and no longer smooth, non-absorbent, durable or easily cleanable.
- Foods throughout the facility are being stored in containers designed for the storage of home goods.
- There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solution (quaternary ammonium).
- There is a "Y" adapter on the faucet at the mop sink that allows 2 hoses to be attached. Mop sink faucet vacuum breakers are not designed for the continuous pressure created by the "Y" adapter/hoses.
- The wastewater pipes of the 3 compartment sink are directly plumbed into the grease trap and sewage system.

- Raw beef and raw chicken in secondary packages (not original packaging) stored adjacent to each other in the freezer.
- Wet wiping cloths were observed on countertops and in food preparation areas, not properly stored in the sanitizer bucket in between use.
- A crate (red) was being used for shelving in the walk-in freezer.
- Breads are being stored in clear containers designed for the storage of household goods.
- There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solution (quaternary ammonium).
- The wastewater pipes of the 3 compartment sink extend down into the floor drain, eliminating the air gaps; the wastewater pipe at the 1 compartment sink extends down into the floor drain, eliminating the air gap.
- Observed missing/worn flooring throughout kitchen.

- Total violations: 7
- There was no verifiable employee health policy was not available at the time of the inspection.
- The hand washing sink was used for water to fill a sanitizer bucket.
- A hand washing sign was not posted at the hand sink.
- Employee was seen wiping down a cutting board with a cloth and some sort of chemical then was told afterwards to wipe with a sanitizing spray.
- There was no mesh screen on the serving window or back door that was open.
- An employee was observed working with food without a proper hair restraint on.
- The pipes for that run into the wastewater tank were not secure.

- Employees are not properly trained in food safety, including food allergy awareness, as it relates to their assigned duties.
- Employees are not aware of the reporting procedures concerning information about their health and activities as they relate to diseases that are transmissible through food.
- This food establishment has not established procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- Mozzarella cheese, Pepperoni, tomato sauce, chicken strips, meatballs, sliced ham, sliced tomatoes, and shredded cheese were stored at cold holding at improper temperatures.
- The premises are not free of litter.
