Hollywood, CA (November 14, 2012) – In true Dixieland style, Spoonful Restaurant has opened showcasing the Southern charm of Georgia-born restaurateur, Frank Foley, and the love of his home. Foley, with his Executive Chef, Los Angeles newcomer Victor Calderon, is showcasing deep Southern flavors in lighter and
surprising ways. The new dining establishment will be serving over 40 Southern varieties of whiskeys created in the South as well as wine and craft beers on tap. It will also be showcasing twists on favorites such as a
Sazerac, Mint Julep and Pimm’s Cup (originally created in England, this low-alcohol cocktail became a classic in New Orleans.)
“I am reliving my childhood in Los Angeles,” states Foley. “With Victor’s culinary deftness, he has fashioned some of my grandparents’ traditional favorites into lighter Hollywood fare. I am excited by Spoonful’s menus, both bar and food, which showcases the love of my deep Southern roots. I also believe that the service in my restaurant will showcase the warmth of Dixie hospitality into the Los Angeles limelight.”
For starters and dinner, Chef Calderon has created a series of signature Spoonful dishes reminiscent of Foley’s growing up in the rural South. The appetizers are
Buffalo Shrimp with a Celery Root Puree and a dollop of Housemade Ranch ($12) to temper the heat; Pulled Pork Sliders with Three Different Housemade BBQs,
inspired by the sauces from Georgia and the Carolinas ($11), cornmeal crusted Fried Green Tomatoes, served with a Spicy Remoulade and Arugula ($7) and
Braised Pork Belly with a Panko Crusted Soft-Boiled Egg (a.k.a Spoonful’s Bacon & Egg), drizzled with a Vanilla Gastrique ($10).

At dinner, guests will again find Foley’s family preferred dishes, executed by Calderon’s creative hand such as the classic Cajun Gulf Shrimp and Grits (Sautéed Shrimp with Onions over buttery Grits)($17); Southern Fried Chicken
(Thigh and a Drumstick) served with Collard Greens and Mac & Cheese ($14) and Braised Short Ribs, paired with a Sweet Potato Polenta and Broccolini, Leek Hay ($16). Being the Southern gentleman, Foley, allowed Calderon to craft a vegetarian dish with a Dixie fave: Spaghetti Squash and Roasted Fall Vegetables, Tossed in a Smokey Tomato Sauce ($13).
Calderon deftly produces a Date Cake, evocative of a Sticky Toffee Pudding and served with Housemade Toffee Ice Cream ($8), Pecan Pie and Housemade Bourbon Ice Cream ($8) and a Seasonal Fruit Cobbler with Housemade Vanilla Ice Cream ($8).
