MAKING VEGGIES TASTE GOOD

So many of my clients tell me they don’t love vegetables.

When I ask how they are cooked, it’s usually boiled with butter or just plain.

Today I want to let you in on how I make almost ALL my veggies.

1 – 3 Tbs of EVOO (depends on how much you are making)
1 clove of garlic (smashed or chopped)
1/4 tsp of dried red pepper flakes (can adjust more or less depending on how much heat you like)
Kosher salt & pepper to taste

Drizzle oil onto bottom of a glass bowl (large enough to contain your veggies). Add garlic and red pepper flakes. Twist the bowl around to coat all ingredients. Let sit while your veggies boil.

Use whatever veggies you prefer; green beans, broccoli, cauliflower, swiss chard, etc. Add veggies to boiling salted water, and cook until crisp tender (this is usually when they look a bright, vibrant color). Drain veggies well and pour them into the EVOO mixture. Don’t mix into oil just yet, this is the best time to add salt and pepper, right when things are super hot. Take a pinch of kosher salt and ground black pepper, and add to top of veggies. Then toss the veggies in the oil, taste to adjust seasoning. Enjoy!
