Broiled Tilapia with a Lemon-Dill Beurre Blanc Sauce: Deceivingly Simple And Elegant

A perfect dinner party dish that can be prepared in no time!

Don't be intimidated by the title of this recipe.  It's not nearly as difficult as it sounds. In fact, it's quite easy and absolutely delicious!  Requiring only a few simple steps and fresh ingredients, this dish takes little time to prepare.

Despite its quick preparation time, it's a wow dish that will be sure to  impress your friends and family. The presentation is beautiful and the flavor is fresh. The combination of shallots, wine, butter, dill, and lemon makes a light creamy sauce that's packed with flavor in each bite.

This cream sauce is perfect with a fresh fillet of tilapia or any other mild fish. Broiling tilapia is the quickest and easiest cooking technique I've found.  Due to its delicate flaky texture, the less you handle your fillet, the better, or your fillet may fall apart.

Makes: Serves 4

Ingredients
4 tilapia fillets
2 tablespoons olive oil
1 large shallot
1 cup dry white wine (chardonnay, if you have it)
1 stick (1/2 cup), cold butter cut into small cubes
3 tablespoons fresh dill, chopped
2 teaspoons grated lemon zest
2 teaspoons fresh lemon juice (add more to taste)
pinch of red pepper flakes
salt and pepper to taste 

Directions
Begin with seasoning both sides of your tilapia with salt, pepper, and olive oil on a sheet of foil.  Broil your tilapia until no longer opaque, about 5-8 minutes.

Meanwhile, heat 2 tablespoons of olive oil in a large skillet over medium/high heat and saute your shallots until soft, about 8-10 minutes.  Add your white wine and increase your temperature to bring your liquid to a boil.  Boil your liquid until most of it evaporates and looks glazy, about 5-8 minutes. 

Then remove your pan from the heat and whisk a few cubes of butter into the shallot wine mixture at a time until you've added all of your butter. Once all of your butter has melted and the consistency is thick and creamy, add the rest of your ingredients (dill, lemon juice, lemon zest, pinch of red pepper flakes, salt, and pepper). Whisk until combined and serve over your broiled tilapia.
