  • Several Temp Control for Safety (TCS) foods in drawer unit under grill at 46-52°F. Raw fish and ready-to-eat items (hotdogs, cheese) discarded. Raw beef, raw chicken relocated to reach-in unit(items had been in drawer overnight). TCS items in walk-in cooler also at temperatures above 41°(beef at 45; chicken at 46). Walk-in ambient at 47°F. Technician called for both units. Ensure these units can maintain food temperatures of 41°F and below.
  • Cooked beans in walk-in overnight at 46-50°F. Beans were discarded. Cooked, TCS foods must be cooled to 41 within 6 hours.
  • No test strips for measuring quat sanitizer used in spray bottles. Obtain test strips.
  • Exterior handle of microwave on main prep line encrusted with food. Food spills on interior of drawer unit. These areas must be cleaned regularly.

  • Person-in-charge (PIC)/CFSM responsibilities to ensure food safety are not being met. Time/Temp Control for Safety (TCS) food out of temperature; TCS food held past expiration for sale (2 packages of cream cheese); food equipment is not being cleaned and sanitized as required. PIC/CFSM is responsible for ensuring these responsibilities are met.
  • Encrusted food buildup on potato punch, can opener. PIC began cleaning items on request. Food contact surfaces must be maintained clean.
  • Tongs used for self-service of pickled eggs had not be cleaned in several days according to PIC. Tongs were washed and sanitized on request. These tongs must be cleaned and sanitized at least every 4 hours.
  • BBQ pork in refrigerator at 57°F. Food was discarded. This cooler is not working. Discontinue using it for food storage.
  • Cream cheese for sale on store side (2 packages) with use-by dates of 6-8-18. These items were discarded. Establish protocol for checking expiration dates of food items. Prepared foods may not be served beyond 7-day period and packaged, TCS food may not be served or sold past date printed on package.
  • Replace faucet at 3-compartment sink. Faucet can no longer be repaired.
  • All food preparation and service from this establishment must be discontinued until further notice. This includes breakfast, lunch, and dinner service. The Person-in-Charge (PIC) must satisfactorily demonstrate that the food service component can be operated as required and a re-inspection/follow-up must be conducted. This Health Authority must grant approval for the food service operation to resume. The convenience store may remain open at this time.
  • The June 21 inspection was a follow-up after receiving its previous score of 53, or U.
  • A follow-up inspection will be held, but no date was provided.
