• Observed employee rinse hands w/sprayer at 3-comp sink between loading soiled dishware and taking out clean dishes. Employee was instructed to use hand washing sink to properly wash hands between handling soiled and clean dishware. Employee complied with request and rack was rewashed.
• Observed food build-up on slicer used to slice roast beef (slicer was not in use). Employee disassembled slicer and began cleaning.
