ICYMI: Canton, Cherokee County Food Service Scores

The Cherokee County Environmental Health Department conducted food service inspections Aug. 24-31 at the following establishments:

Hawaiian Paradise Oasis (Food Service Inspections)*
1200 GRESHAM MILL PKWY HOLLY SPRINGS, GA 30115
View inspections: August 24, 2016 Score: 86, Grade: B

• No proof of certified food safety manager certification. Must turn in a copy of CFSM certification to Amy Grice.
• Potentially hazardous foods not properly date marked. Must be dated when opened and discarded within 7 days or use/sell by date, whichever comes first.
• Must post current inspection report, CFSM certification and choking poster at service window.
• Must post food service permit at service window.
• Downstairs storage area not approved. Floors/walls/ceiling must be smooth, non-absorbent and easily cleanable.
• Self-service window not fully self-closing.
• Remarks: more information needed and chili/cheese as to its shelf stability once opened. Must contact Amy Grice with that information. Employees of concession must use restrooms located in outside pool area.

Steak-N-Shake 618 (Food Service Inspections)*

View inspections: August 25, 2016 Score: 89, Grade: B

• Observed build-up of black soiled material on the inside lid and kick-plate of ice machine. Must ensure ice machine is clean and sanitized.
• Observed food permit, CFSM and license are not properly displayed. Must be posted prominently in full view no lower than 72 inches.
• Observed food containers were stacked and stored wet. Must ensure all equipment is properly air-dried before stacking.
• Observed the floor under the fat fryer is soiled with grease stuffs. Must ensure to pull out equipment while doing deep cleaning.
• Observed the dumpster's lids were open. Must keep dumpster area clean and lids and tops closed.

• Observed this establishment has no certified food safety manager. Must have someone on staff certified in food safety.
• Observed meats being stored in walk-in cooler not date marked. All food in its original packaging must be labeled and date marked.
• Observed the walk-in cooler's thermometer not reading accurately. Must provide working thermometers in all working coolers.
• Observed a build-up of grease and other food stuffs between and behind equipment. Must keep facility and equipment clean.
