ICYMI: Canton, Cherokee County Food Service Scores

The Cherokee County Environmental Health Department conducted food service inspections Dec. 14-21 at the following establishments:

Captain D's (Food Service Inspections)
9805 HWY 92 WOODSTOCK, GA 30188
View inspections: December 20, 2016 Score: 79, Grade: C

• Observed employees drinking from open cups in the food preparation area. Must always drink from closed cups with straw. Corrected onsite by discarding the drinks. Corrected On-Site.
• Observed the inside of the ice machine very dirty. Must thoroughly clean and sanitize the machine at the end of the day after draining the ice.
• Observed potentially hazardous food in the walk in cooler stored above 41 degrees Fahrenheit. Corrected onsite by discarding the food. This food was made on Sunday, 12/18/16.
• Observed potentially hazardous food held using time as a public health control with no time marking. Corrected onsite by marking the time on the pan. Corrected On-Site.
• Observed the handle of the ice scoop touching ice in the ice bin. Must always store in upright position to prevent contamination.
• Must clean the vents, coolers, gaskets and floors thoroughly.

• Observed improper horizontal and vertical separation of raw from raw and raw from ready to eat foods. Corrected onsite by rearranging the foods. The higher the cook temperature the lower it must be stored.
• Observed food stored uncovered in the walk in cooler and in the kitchen. Corrected onsite by covering with lids. Corrected On-Site.
• Observed soiled food containers washed with soap but not sanitized before storage. The manager must properly wash, rinse and sanitize all food contact surfaces.
• Observed chemicals stored all over the place. Must store the chemicals in a designated place. Corrected onsite by moving the chemicals. Corrected On-Site.
• Observed food stored on floor. All the food must be stored 6 inches off the floor.
• Clean the kitchen thoroughly -- coolers, floors especially behind the equipment.

• Observed the toppings for the ice cream not covered. Corrected onsite by covering with lids.
• Observed the inside of the ice machine covered with mold. Must thoroughly clean and sanitize the ice machine by the end of the day.
• Potentially hazardous food not held at 135 degrees Fahrenheit or above. Observed BBQ Pork hot held at 124 degrees Fahrenheit. Corrected on site by reheating it to 165 degrees.
• Potentially hazardous food held under time as a public health control without time marking indicating 4-hour limit. Corrected onsite by indicating the time on the container.
• Must protect the cups and lids from environmental contamination. The cups were stored in a place where there is lot of dirt and food crumbs.
• Must thoroughly clean the gaskets, inside of the coolers and freezers and doors. Must thoroughly clean the floors. Clean the vents in the walk in cooler.

• Observed several Time/Temp Control for Safety (TCS) foods in prep unit at 51-56°F. All items were discarded and unit will be serviced prior to placing food items back in unit. Cold, TCS foods must be held at 41°F and below.
• Observed several pans of cooked foods (turkey, mac/cheese, dressing) stacked and covered with foil in walk-in during cooling phase. Items were rearranged in single layer and covers removed to allow for proper cooling.
• Self-service salad bar and dessert items placed out for consumers without sneeze guard. Sneeze guard must be in place if unwrapped foods are to be placed out for self-service.
• Majority of staff preparing food in kitchen and handling clean dishware without hair restraints and one staff without proper guard for facial hair longer than 1/2". Hair restraints must be worn when performing these tasks.
• Thick food grease and debris collecting on shelves under prep tables and equipment on cook line. These areas must be cleaned.
• Heavy buildup of grease and food debris on floors on cook line. Establish and maintain cleaning schedule. Damaged floor on cook line must be repaired.
