Kitchen Sink Fried Rice

The name doesn't sound appetizing, but try it when you have leftovers and don't know what to do with them.

Don’t let the name fool you. This is a meal your family will love. It’s made with all the leftovers that usually get thrown out. I love fried rice and it’s such an easy meal to make. You can put as little or as many items that you want into it. It’s filling and will satisfy any hungry man.

I bought a huge bag of broccoli at Costco and I knew most of it would be wasted. It ended up in the fried rice, along with some chicken and several vegetables that were about to go bad. This recipe is only a basic guide to what you can put in your fried rice. Make it your own. It can also be made with beef, shrimp or pork.

INGREDIENTS

3 cups of cooked leftover rice

2 cups of cooked broccoli

1 cup of cooked pepper (green, red, yellow)

4 heads of baby bok choy

1 cup of diced chicken

1 tbsp. of minced ginger

1 tbsp. of minced garlic

1 chopped onion

½ cup of oil

⅓ cup of soy sauce

¼ cup of hoisin sauce

2 eggs

INSTRUCTIONS

1. Heat oil in large, nonstick skillet on medium heat.

2. Add ginger, garlic and onion and sauté about three minutes until tender.

3. Add eggs and stir to cook, chopping as you stir.

4. Add rice, all vegetables and chicken and stir.

5. Add the soy sauce and hoisin sauce and mix well.

6. Let cook for about four minutes until heated throughout.

7. Season with salt and pepper, if needed. You can also add some sesame seeds, but that's optional.

If you don’t have hoisin sauce in your pantry, you can just add more soy sauce mixed with a little honey (about a tablespoon). Experiment with this recipe. You can use the items you have in your kitchen. The main things you should use are the soy sauce and the rice. Other than that, it’s your creation.
