• Wiping cloth chlorine sanitizing solution not at proper minimum strength; bucket sanitizing solution should be, 150-250ppm;
• In-use utensil (knives) stored soiled with food stuffs on them; in-use utensil must be cleaned and stored on a clean portion of the food preparation area with handles up;
• Reach-In cooler and freezer, are not clean; shelves and door gaskets are soiled with food stuffs; observed food debris accumulated on the decks of both the coolers and the reach-in freezer; must clean and sweep at the end of each shift;
• Observed non food-contact equipment in poor repair; a work order should be completed to request a repair to the counter’s door under the soda machine; and
• Floors not maintained clean; overall cleaning of the whole facility is lacking. At the completion of each work day, the facility should be cleaned and mopped.
