Restaurant Inspections: Expired Chicken, No Hair Restraints

The Cherokee County Environmental Health Department conducted food service inspections Jan. 11-18 at the following establishments:

• Chlorine sanitizer not at proper minimum strength for manual ware washing. Must ensure the sanitizer solution is at proper strength thru-out the day. Corrected On-Site.
• Observed a food container being stored in the reach-in-cooler was not labeled or date marked. Must label and date mark all foods not in it's original packaging.
• Observed food containers were stored and stacked wet. Must make sure all containers and equipment is properly air-dried before stacking and storing.
• Observed several gaskets on the cold holding units are soiled or in poor repair. Must ensure the gaskets are clean and sanitized or replaced.
• Observed the floor tile in the walk-in-cooler is chipped. Must ensure all floors are smooth and easy to clean.

• Observed food and grease accumulation on the floor and behind the equipment. Must ensure to clean the hard to reach places daily.
