Restaurant Inspections: Live Roaches Still Plague Mandarin House
The restaurant on Marietta Highway in Canton scored a 72, or C, on its follow-up inspection.

The Cherokee County Environmental Health Department conducted food service inspections Sept. 28 through Oct. 5 at the following establishments:

- Person-in-charge (PIC) has limited knowledge of food service responsibilities and of food safety. Active management of employees performing food-related duties must be in place in establishment. PIC must obtain knowledge required for this role. Please contact the Cherokee County Environmental Health office to schedule education and training sessions.
- Posted CFSM does not have food management duties and those duties are not being met. PIC is not a Certified Food Safety Manager (CFSM). PIC must become a CFSM or employ a CFSM with food supervisory and management responsibility(on a daily basis)no later than October 20, 2016. Repeat Violation. Correct By: 10/20/2016
- Observed rice on shelf at 64°F; raw eggs on hibachi cart at 65°F; and large container of butter mix at 84° in water heater closet. All items were discarded. Time/Temp Control for Safety (TCS) foods must be held at 41° & below or 135°F & above. Corrected On-Site.
- Observed 5 gallon bucket of vinegar, rice, and butter mix stored with bulk chemicals in water heater room. All food items were removed from this area. Do not store food or food containers with chemicals. Corrected On-Site.
- Several bulk storage containers did not have labels. These containers had salt, sugar, and flour in them. Containers with contents that appear similar must be labeled to aid in identification and prevent accidental misuse.
- Several knives were being stored on a dirty magnetic knife rack on wall above grill/wok. Large spoons and ladles were being stored with food contact surfaces up and exposed to open air. Food service utensils must be stored with food contact surfaces protected from environmental contamination. Store these items in drawers, storage containers, or with food contact surface covered/protected.

- Lack of food management/managerial control continues in establishment. Evidence of employees continuing the storage of personal items (foods and medicines) with consumer food, lack of proper cleaning methods, improper chemical storage, and lack of date marking. The Person-In-Charge (PIC) is responsible for ensuring that employees are complying with the GA Food Code.
- PIC had copy of ServSafe certificate of an employee of another permitted facility. This person is only present once a week and the responsibilities of the Certified Food Safety Manager (CFSM) are not being met. There must be a person with food management oversight present on a daily basis who is knowledgeable and responsible for all food operations. The Person-In-Charge (PIC) has 30 days from the last inspection date (9-26-16) to become a CFSM or to employ a CFSM with daily responsibility and management of food duties.
- Observed encrusted rice buildup inside rice warmer. Rice warmer was taken to dish area for cleaning and sanitizing. Observed live roaches on cutting boards and food container lids on shelf under prep table. These items were also taken to dish area for cleaning and sanitizing. Corrected On-Site.
- Observed employee at 3 comp sink using improper method of cleaning and sanitizing food equipment. Food equipment must be washed(soap/ hot water), rinsed (clean water), and sanitized (bleach/water at 50 ppm chlorine). Employee took improperly washed and sanitized items to dish machine.
- Observed food items which had been cooked (Time/Temp Control for Safety--TCS) in establishment, frozen, and placed in refrigeration units for use without any date-marking. Items prepared and held more than one day must be dated (cook, freeze and thaw date).
- Observed cleaning chemicals stored with food pans, also observed plumbing compounds on shelf with dry goods. All improperly stored items were relocated. Do not store chemicals with food equipment and remove any chemicals unnecessary for operation.
- Observed employee medicines in reach-in unit above food items. Medicines were removed. Keep employee medicines out of food storage and preparation areas. Corrected On-Site.
- Large rice warmer had broken/missing plastic cover on lid hinge. Foil was being used as cover. Replace hinge so that warmer can be properly cleaned and sanitized.
- Foil wrapping on stove and electrical conduits must be removed. This material is not cleanable, is an insect harborage, and is coated in grease buildup.
- Observed unwrapped food items stored in grocery and carryout bags. These bags are not approved for this type of food storage. Discontinue this practice.
- Several residential type freezers have been installed in dining areas on top of carpet. These units must be relocated into kitchen area where approved flooring material is in place.
- Replace broken/missing tiles in kitchen. Repair covered base on wall in dining room.
- Facility is still cluttered inside and out. If you are not using the equipment, eliminate it. This makes cleaning easier and makes room for equipment that is needed. Eliminate personal items from areas throughout kitchen. Facility had bags of personal foods mixed with consumer food in several areas.
- Facility is infested with roaches. Saw roaches on dish machine and over a dozen were found under a cleaned cutting board on storage rack. Improved cleanup is needed. This problem must be fixed immediately.
- This follow-up inspection to the restaurant's previous score of 55, or U, was conducted jointly with Curtis Barnhart, Cherokee County's Environmental Health Department manager.
- Another follow-up inspection will be held Oct. 28.
