Tropical Shrimp Kabobs

It will make you feel like you're in the islands.

This recipe was conceived when I was back home in Florida this summer. My sister was raving about a shrimp kabob she had eaten at a friend's house. It was very simple, just shrimp, papaya and plantains. Even though she wasn’t a big fan of papaya, she said it was delicious and I just had to try it. It was so good, I will definitely be making them again.

My sister didn’t know what seasonings were on them, so I came up with my own. The papaya and plantains should be almost green. If they’re too ripe, they will fall off the skewers. This recipe is great for summer grilling. It makes you feel like you’re in the tropics.

INGREDIENTS

1 lb. of medium shrimp

1 plantain

1 papaya

Salt and pepper

Garlic powder

¼ cup of honey

Juice from 1 lime

Skewers

INSTRUCTIONS

1. Cut plantain into approximately ½ in. cubes or circles.

2. Cut papaya into approximately ½ in. cubes.

3. If using wooden skewers, soak in water for 10 minutes.

4. Skewer the plantains, papaya and shrimp onto skewers starting with the papaya.

5. Season skewers with salt, pepper and garlic powder.

6. Heat grill to medium high heat.

7. Place skewers on grill and cook until shrimp is no longer pink, about 5 minutes per side.

8. Mix the honey and lime juice together and baste the skewers with the mixture.

9. Serve with some saffron rice.

Even if you have never tried papaya or plantains, you will be pleasantly surprised by this dish.
