Observations: Person in charge stated chlorine sanitizer was used to sanitize ice cream/milkshake machine. Facility did not have chlorine test strips at time of inspection. Must ensure proper test strips are provided Non-food contact surfaces not clean. At time of inspection, observed exterior of several clean dish containers with buildup of debris.

Observations: Employee using the front hand sink to rinse milkshake container. The back hand sink is used to store strainers. Transfer pans for cooked chicken are cleaned every 6 hours. Except as specified in 3 of this subsection, if used with potentially hazardous food (time/temperature control for safety food), equipment food-contact surfaces and utensils shall be cleaned throughout the day at least every 4 hours. Storage containers stored as clean with food debris present and greasy. American cheese and shredded cheeses holding above 50F in the lower portion of the prep cooler. Tomatoes under time as a public health control without time indicating start of time control. The air temperatures of the coolers on the prep line are 63.5F and 53F. Ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use. The manager stated a technician will be contacted to repair the units today. The manager removed the items from the lower portion of the cooler. The foods in the upper portion of the cooler are under time as a public health control. QUAT test strips are waterlogged and chlorine test strips are not provided. A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided.
