Observations: In-use utensils for hot-held potentially hazardous foods not stored in a container of 135F water. At time of inspection, observed several clean utensils being stored in container with food debris. At time of inspection, observed single-use cup being used as exterior barrier to ensure ice cream does not over flow at blender station. Advised person in charge single-use cup must only be used once and discarded. Fans located at walk-in freezer condenser has buildup of ice. Non-food contact surfaces not clean. Plumbing at vegetable preparation sink not in good repair.

Observations: Potentially hazardous foods, such as cut melons, cut tomatoes, cut goat cheese, cooling in top portion of prep cooler that is left open across from grills and other heating units. Two (2) knives stored between wall and side of prep cooler. Knives removed. In-use utensils shall be stored properly between uses. After handling sanitizer wet-wiping cloth with gloved hands, employee proceeded to handle ready-to-eat foods without changing gloves. Top edges of warewash machine and curves of doors contain buildup of food residue.
