Delicious Things Happen At The Douglasville F&A Market!

I have been at the Douglasville Farmer & Artisan Market for about a month now and I have had the pleasure of meeting dozens of local citizens looking for  healthy, delectable ideas on creating a meal that the entire family would enjoy. The best part about it is, I have the opportunity to show people that cooking with and eating healthy can be an awesome culinary experience! I myself have started a new journey to lose weight, feel great, and finally change my eating habits and those of my family for the better. That being said, finding a way to get more fruits and vegetables in our daily diet is imperative. Now even though I am mainly helping people figure the market out, there are weeks that I will grab a couple of items from the farmers at the market and create a dish that tantalizes taste buds in the most delicious way! Last week we had lettuce, peaches, swiss chard, fennel and a host of other ingredients. Separately these fruits and vegetables makeup a vendor's table, but together they make a Summer Grilled Peach Salad with Herbed Vinaigrette & Cranberry Goat Cheese, and I just so happen to have that recipe:

Summer Grilled Peach Salad w/ Herbed Vinaigrette and Cranberry Goat Cheese.

10 cups mixed salad greens, washed and ready to use (choose from any greens including Kale, Spinach, or Chard)                                                                                           2 yellow peaches, slightly firm to the touch , sliced in half                                                                                                                                                                                                     2 oz fresh  cranberry goat cheese  crumbled or sliced                                                                                                                                                                                                                    1 cup  each chopped carrots, fennel, cauliflower, Spring Onion

· Chop mixed greens.

· Toss with carrots, fennel, cauliflower and spring onion.

· Heat Grill  medium/high heat.

· Place peaches face down on grill for about 5-7 minutes. (Yea, you want a good char on them. I mean what’s grilling without the grill marks.)

· Remove Peaches from grill and set aside.

· Make herb vinaigrette. (Recipe Follows)

· Toss salad mixture in vinaigrette mixture

· Slice peaches and lay them on top of salad.

· Sprinkle goat cheese  over peaches

· Drizzle vinaigrette over peaches and goat cheese.

· Serve and Enjoy!

 Vinaigrette

Herbed Vinaigrette

1 cup of olive oil

1/3 cup of  champagne vinegar

1 TBSP  each fresh herb (lavender, fennel leaves,  or basil)

4 TBSP Honey

1 pinch of Salt.

Blend all ingredients together in a food processor. Season to taste.

Shake well before using.

This salad was sensational! Everyone loved the light and smooth vinaigrette that enrobed the sweet warm peaches, leafy greens, luscious fennel, crunchy carrots and radishes. The cranberry goat cheese definitely made a splash along side all of these fresh and awesome ingredients! If you are looking a cool delicious meal, then look no further. This salad is for you. Who said you can't have your fruit and vegetables too?
