Remarks: Employee (cooking at the grill) was observed repeatedly skipping the handwashing step when changing his contaminated gloves. Follow-up inspection will be completed on or before December 21, 2014. Cross-contamination prevention methods not observed during cooking: Employee cooking foods at the grill was touching raw chicken, raw steak, and raw eggs then touching cheese slices and hashbrowns. Unwashed tomatoes were stored above ready-to-eat foods inside the walk-in cooler. Cleaning methods were ineffective for several wares. Whole tomatoes were observed being washed in the compartment sink. Employee was observed continuing to use contaminated gloves to work with food. Storage tray for spoons and the trays for coffee mugs were unclean with accumulations of food debris. Water was leaking from the pipes of the compartment sink.

Remarks: The onion slicer and nozzles of the sweetened tea urns were not cleaned with adequate frequency. Observed multiple pans of sliced tomatoes staggered times of discard. All of the tomatoes were sliced at 10 am. The two pans underneath the sandwich station had discard times of 3 pm and 4 pm, respectively. The pan, which was in use, had a discard time of 2 pm. An employee corrected the labels on the other two pans. Time as a public health control procedures must be followed. Foods held under the four-hour rule must be labeled with discard times, which do not exceed four hours total holding time.

Remarks: Cheeses and milk were not being maintained at 41 F or less in a reach-in cooler. Several prepared foods have been held past the 7 day holding period: chicken stock (Prep 12/9/14), lamb stock (Prep 12/3/14), vegetable stock (Prep 11/29/14), pork loin (Prep 11/19/14), boiled egg yolks (Prep 11/29/14), deviled eggs (Prep 12/9/14), ham (Prep 12/5/14), and pork (12/4/14). Canning/Preservation method is in use without prior approval from Health Department; observed habanero jelly being canned using reduced oxygen packaging method. Several other canned products were observed including arugula pesto sauce and pickled vegetables. Owner discarded the food items. Process has been suspended until approval letter is obtained. Dry storage shed has shelf-stable foods, freezers of food, and coolers of food present without installed washable flooring material, walls, and ceilings.

Remarks: Hands were not washed between glove changes. Floor tiles are in disrepair in multiple locations in the kitchen. Tile/vinyl coving is not present along the wall behind the dishwashing stations and is in disrepair at the wall base near the beverage station.

Remarks: Employee (with hair longer than 1/2 inch) was preparing sandwiches without wearing a hair restraint. Sandwich knives were stored in an unclean container at the prep station. Dust is accumulated on the rear facing side of the wall overhang at the back counter. Employee’s umbrella was kept on the prep table in close proximity to cookies being prepared for the oven.
