Cross-contamination observed during the cooking process. Employee placed raw chicken onto the grill in direct contact with a piece of steak which was nearly ready for service. Packages of raw ground chorizo were stored above tortillas inside a reach-in cooler.

Observations: Final sanitizing rinse was yielding a utensil surface temperature of 156.4 F. Employee turned on the heat booster. The utensil surface temperatures were then averaging 172.2 F. A minimum utensil surface temperature of 160 F must be achieved in mechanical dish washing operations. Toilet room has neither self-closing hinges or a self-closing device installed.
