Observations: Employee drinks in multi-use cups. Employee drinks stored next to food, clean utensils, deli paper. Drinks removed. New Zealand green mussels taken out of the original box & stored in a pan in the cold top cooler. PIC voluntarily discarded mussels. Molluscan shellfish may not be removed from the container in which they are received other than immediately before sale or preparation for service. Shellstock boxes New Zealand mussels not kept on file for 90 days. Shellstock boxes/tags shall be kept in chronological order for 90 calendar days after the last mussel is removed from the box. The Thai Star appetizer is listed crabmeat on the menu, but it contains imitation crab and crabmeat.
