Remarks: Raw chicken above raw beef. Raw chicken relocated next to raw beef. Unwashed cilantro, peppers above ready to eat foods (pico de gallo, salsa,cut onions). Ready to eat food relocated to approved location. Rice cooling on table top covered for about an hour to an hour and a half. Rice transferred to thinner pans, placed on ice, and moved to freezer. Rice vented and stirred. Facility must cool via a cooling method that facilitates rapid cooling from 135 deg. F to 70 deg. F within 2 hrs and from 135 deg. F to 41 deg. F within 6 hrs. Employees wearing watch, jewelry other than plain ring while working with exposed food. Employee with long painted fingernails working with exposed food. Raw fish in vegetable prep sink. Raw fish removed from sink. **Wash rinse and sanitize sink. Handle to tongs for raw chicken in raw chicken. Had operator wash, rinse, sanitize tongs and place in a separate container. Employee handled dirty dishes with gloves, rinsed them, and then handled clean dishes at dishwashing area.

Observations: There was no person left in charge. The staff present had a difficult time communicating in English and also answering questions about kitchen operation. The ventilation hood system over the cook line had a build up of grease. TODAY’S INSPECTION IS A REQUIRED ADDITIONAL ROUTINE INSPECTION AS RESULT OF FAILING PREVIOUS ROUTINE INSPECTION.
