Observations: Violations for proper drinking, no bare hand contact with ready-to-eat foods or approved alternate method properly followed, food separation and protection, hot holding, proper date marking and disposition (amongst other good retail practices) were observed today. Employee handled carrots with his bare hands while he was cutting them. Food discarded. Employee drinks in unapproved containers (open & uncovered drink bottle, multi-use cup); both were stored in the upright cooler above customer food. Employee drink cups stored in unapproved locations: on dish shelves above dishes, on prep table next to the rice warmer, on the prep table next to vegetables that were actively being cut. Drinks discarded or moved to approved locations. Unwashed fruits and vegetables not separated from ready-to-eat foods. Hot-held potentially hazardous foods not maintained above 135F; no time controls/documentation in place: in service line hot holding unit. Food discarded. Ready-to-eat potentially hazardous foods held >7 days: two pans of rib tips were date marked 4/23, jerk pork 4/23, cow foot 4/23. Food discarded. No working small-diameter probe thermometer available for measuring temperatures of thin-massed foods. Employee was rinsing a wiping cloth in the designated vegetable prep sink. Training provided; employee stopped misusing the sink. Old date marks & sticker residue left on food containers. Carbon buildup on pots and pans. Follow-up within 10 days.
