<h2>The Menu:</h2>
<h3>Blistered Tomato &amp; Whipped Ricotta Crostini</h3>
<ul><li>The Technique: Making fresh, fluffy Farmhouse Ricotta from scratch using milk and citrus. Guests will grill rustic bread, smear it with the cheese, and top it with vine-ripened tomatoes blistered in garlic oil.</li></ul>
<h3>Prosciutto-Wrapped Poached Pears with Goat Cheese</h3>
<ul><li>The Technique: Fruit poaching and flavor balancing. Late-summer pears are poached to a tender-crisp texture, stuffed with tangy chèvre, wrapped in savory prosciutto, and flash-baked until warm and crisp.</li></ul>
<h3>Charred Mediterranean Lamb (or Beef) Kofta Skewers</h3>
<ul><li>The Technique: Working with fresh aromatics and ground proteins. Guests will mix ground meat with minced mint, garlic, cumin, and coriander, mold them onto skewers, and sear them on high heat to lock in the juices.</li></ul>
<h3>Charred Haloumi with Hot Honey &amp; Toasted Pistachios</h3>
<ul><li>The Technique: Managing high-melting-point cheeses. Guests will sear thick slices of Cypriot haloumi cheese directly in a dry skillet until a beautiful brown crust forms, finishing it with a drizzle of hot honey and crushed pistachios for texture.</li></ul>
<h3>Crispy Hand-Folded Spinach &amp; Feta Spanakopita</h3>
<ul><li>The Technique: Working with delicate phyllo pastry. Students will layer, brush with olive oil, and fold golden triangle pockets stuffed with a savory, herbaceous mixture of spinach, feta, dill, and lemon zest.</li></ul>
What To Expect:&nbsp;In our classes you’ll work together with other students in a fun, hands-on environment led by our professional chef instructors.

<ul><li>The Skill: Light and refreshing summer cooking. You’ll learn the art of balancing acids by “cooking” tender shrimp in fresh lime juice, then tossing it with sweet diced mango, crisp red onion, and a splash of cilantro-infused oil.</li></ul>
<h3>&nbsp;Pargo Frito (Crispy Costa Rican Fried Snapper)</h3>
The Skill: Whole or fillet fish fabrication and high-heat frying techniques. Students will score and season fresh snapper with garlic, lime, and sea salt, then fry it to achieve an ultra-crispy skin while keeping the meat perfectly flaky and tender. It’s served with a side of bright, tangy salsa criolla.

Children living in group homes and shelters that may face an uncertain future, need reassurance they will have ample school supplies and a new book bag, even if they aren't quite ready for a new school year! If students arrive on the first day of school physically and emotionally prepared to learn, their chances of success are greater! For more than 32 years, our steadfast goal remains that we will provide homeless and underserved children in our community with the tools they need to learn….and succeed!
We need enthusiastic people to spread the word about our Back 2 School campaign and rally friends, family, work colleagues, neighborhood, church, and social/civic groups to collect NEW book bags and school supplies. Every item collected will go to children in need and every donation is appreciated.
We welcome individuals and groups to rise up to the challenge of helping deserving kids! Start your collection today and plan to drop off your donations on July 23-24. .&nbsp;
