• Member of management must obtain a food safety certificate; establishment must have someone on staff certified in food safety;
• Observed several food items in the chest freezer, not wrapped or covered. Freezer burns (Pork, Dressed fish, cooked mussels); all foods cooked/raw placed into the freezer must labeled and covered to protect the integrity of all foods.
• Observed leftovers, refried beans, chopped chicken stored in the reach-in cooler, not labeled. All ready-to-eat foods must be labeled with date of preparation or date for disposal.
• Establishment operating without current inspection posted where all customers can view it; and
• Observed an hole in the ceiling, in the back kitchen over the mop sink; the hole should be prepared as soon as possible.

• Observed employee prepping green peppers using bare hands (peppers were then used as ingredient in crab cakes to be cooked). PIC (person in charge) was notified and employee immediately began using gloves;
• Several potentially hazardous items in salad cooler at temps of 46-50°F(beef, raw oysters, boiled eggs, smoked salmon); oysters were discarded, other food items were relocated to walk-in cooler;

• Observed no handwashing at the required times. Observed improper handwashing techniques when asked employees to wash their hands. The manager corrected and handwashing education provided and hands properly washed. Corrected On-Site.
• No Quat test strips for testing sanitizer. The manager must provide test strips. Repeat.
• Handasing sink in kitchen not draining properly. The manager must ensure to repair slow draining hand sink.
