Porubiansky: "I Know We Can Make the Food Even Better" at Century House Tavern

The executive chef is anxious to get started in a new role at Century House Tavern.

Century House Tavern's new executive chef is ready to dive head first into his new role. 

Daniel Porubiansky of Towne Lake will become the new executive chef at the downtown Woodstock restaurant at the beginning of May. 

"I’ve been the number two guy in the top two restaurants in Atlanta for the last 20 years," he said in a press release from the Woodstock restaurant. "It’s time to try this on my own. It’s every chef's dream to have their own restaurant, and what better place to take on this challenge than in my hometown."

Bringing Porubiansky on board has been months in the making, as Century House Tavern's owners started talks with Porubiansky earlier this year about coming aboard.

The change means a much shorter commute and a chance to work where he lives and plays.

"We love it here and since Woodstock Downtown has brought life to the area in a way we never could have imagined, I only see this destination getting bigger," he added. "I’m excited to jump in and be a part of it.”

Porubiansky has big plans for Century House Tavern once he officially takes the helm. He noted he will seek out local farmers and others in an effort to find local, fresh ingredients for his dishes. 

"I’ll move very slowly on any menu changes, but I know we can make the food even better," he added. "It’s important to see what dishes the guests are enjoying and work from there." 

Toren Anderson, a media branding specialist for the restaurant, said the team is excited to bring Porubiansky on.

"Chef Daniel is one of the nicest men I have ever met," she said. "He is known as a saint in the Atlanta restaurant scene."

Porubiansky was with Bacchanalia for nine years, six of which he served as the restaurant's executive chef. He worked another 12 years with Chef Guenter Seeger.

While working with Seeger, Porubiansky helped bring the dining room at the Ritz Carlton to Mobil Five Star status. He also spent time at Le Bernadin in New York City and worked in several Michelin-rated restaurants in Germany.
