  • Dish machine not providing a sanitized dish. Discontinue use until repaired and use 3 compartment sink method.
  • Keep soda gun at bar clean.
  • Use only insecticides that are approved for use in restaurants.
  • Sort dented cans from working stock and do not use.
  • Do not wet stack containers.
  • Do not line shelving with cardboard.
  • Keep fan in kitchen clean and free of accumulations.

Waffle House 1722 (Food Service Inspections)*

  • Dish machine final rinse temp at 140° F max. Minimum required temp for sanitizing is 160° F plate level. Technician arrived to service machine during inspection -- after adjustment rinse temp (plate level) at 160°F. Corrected On-Site.
  • Upright unit at grill is not maintaining food items at 41°F. Door sensor is preventing unit from working/cooling properly. This must be corrected so that food can be maintained at correct temperature.
  • Damp wipe cloths left out on counter tops. Keep cloths in sanitizing solution.
  • Equipment on prep line (grill, prep top cooler, waffle station) has heavy accumulation of food and grease. Clean these areas.
  • Floor tiles missing in front cook area must be replaced. Heavy food accumulation under equipment in front area must be cleaned. Leak from ceiling at front area/dish machine must be corrected.
