Talk: "Harvest Preserving: Salsa and Salt Brine Pickles"
Join the AVFCO, Chef Karen Zimmerman and the Thoreau Club on Tuesday July 21st, 6:30pm at the Thoreau Club (275 Forest Ridge Rd, Concord)

Join the Assabet Village Food Cooperative and the Thoreau Club (Thoreau Outings Center, 275 Forest Ridge Road, Concord) for this joint venture. Together we are bringing you a talk by Chef Karen Zimmerman on Tuesday July 21st at 6:30 pm. Chef Karen will be presenting her class “Harvest Preserving: Salsa and Salt Brine Pickles”
Chef Zimmerman will cover the basics of fermentation as a preserving technique. The class will include a demonstration of how to prepare salsa and salt brine pickles as well as a quick review of kombucha. She will also share the health benefits of including these foods into your diet as well as a bit of the history of this technique. Chef Zimmerman studied with Sandor Katz who wrote the book The Art of Fermentation.
This is a free event and open to all, but registration is expected so they have a head count.
