Babson, Bentley, Brandeis do battle in Chefs' Fare
Chefs' Fare series between Brandeis University, Babson College, and Bentley University spotlights international cuisine.

International cuisines from India, Switzerland and Australia took center stage during a highly competitive Chefs’ Fare series between Brandeis University, Babson College, and Bentley University.
Chefs David Lafleur, Damian Zedower, and Jari Pohjolainen competed for students’ and judges’ choice awards during a three-event battle.
Chef Pohjolainen of Bentley University represented India serving a Grilled Indian Panini. He was victorious winning a gold medal in both categories at the final event and Judges Choice in the first competition.

“Competition brings out the best in me,” said Chef Pohjolainen. “Do it better than everyone else and push the boundaries then you come out a winner.”
Teams at each event were manned by the executive chef and one cook. They had to produce 200 tasting portions of the entree and accompaniments (condiments, garnish) to serve at an action station. If creating a meat or fish entrée, the chefs needed to present a vegan option as well.

Chef Damian Zedower of Babson College represented Australia with a Moo Shoo Kangaroo and Moo Shoo Tofu Buns. He won the gold medal among both students and judges in the second event.
“Cooking with love and passion will always allow me to be a winner,” said Chef Zedower. “Never ever giving up proves it.”
Chef David Lafleur of Brandeis University represented Switzerland with a main course of Veal Geschnetzeltes. He took the gold for Students’ Choice in the first event.
“The platform of culinary competition always brings out the innovation in all of us,” said Chef Lafleur. “It allows us, as chefs, to look at food differently and ask ourselves how we can bring our food to a new level with creativity and ingenuity. There are so many different ways to make an impression to our guests and all of those approaches need to be explored. As competitors our interactive technical delivery is what makes the difference in the guest experience.”
