Millburn Restaurant Reopens: ‘It’s All I Know,’ Owner Says

Umi Sushi reopened in a renovated, 1,900-square-foot space on Millburn Avenue.

MILLBURN, NJ — It’s “all he knows.”

That’s what Millburn restaurant owner Danny Wang says about his predilection for the art – and business – of cooking. Wang recently reopened his restaurant, Umi Sushi, in a newly renovated, 60-seat, 1,900-square-foot space on Millburn Avenue, a move that he hopes will enable the Japanese-Asian fusion restaurant to thrive.

“This business is all I know,” said Wang, who developed his passion for cooking growing up around his father’s Chinese restaurant in the U.S., where he began his culinary career working with his dad at age 14.

“Later, as I worked and watched my father, I was inspired to pursue the art of Japanese cooking,” Wang said. “It’s my heritage.”

Wang said one of the things that makes his restaurant unique is their use of fish from Japan that “isn’t available elsewhere.”

Some examples include Amber Jack, a Japanese summer surprise fish, as well as exotic dishes like Kumamoto Oyster, sea urchin, live scallop and Blue Shrimp.
