New Waterfront Restaurant Planned For Bergen County: Cove By Blu

NJ restaurateurs who already own an eatery on the Hudson River are planning another, they say.

NORTH JERSEY — The owners of the two Blu on the Hudson restaurants — one in Weehawken and a newer location in Livingston — are planning a sister eatery on the waterfront in Edgewater.

They posted on social media over the weekend about The Cove By Blu —showing photos of the building, without revealing much more.

They wrote, "Coming soon. From the team behind Blu on the Hudson."

Commenters identified the location as Edgewater. The eatery appears to be coming to the area of 115 River Road.

Blu on the Hudson is known for an extensive upscale menu including sushi, pasta, and cocktails.

The original 30,000-square-foot Weehawken location opened in spring 2023. Its Blu Sushi Bar sits off the main dining room, serving a menu created by K Dong, in collaboration with Executive Chef Juan Carlos “JC” Ortega.

The Blu Hospitality group's website lists The Cove By Blu as "coming soon," and also notes a future restaurant in Miami.

A website for the new spot says, "Taste the ocean's best."

Patch reached out to the owners but received no response. A spokesperson for the other two restaurants said she had no information to share.
