
Do you worry that you’ll need sterilizing equipment, a microbiologist’s degree, and at least three weeks to make pickles? Never fear. All you need are about 15 minutes and no special stuff. Serve these pretty, lightly brined pickles as a salad with your next cookout. They’re clean and refreshing (and you can do it during a commercial break).
1/4 cup rice vinegar
1 tablespoon sugar
kosher salt
1 Kirby cucumber, very thinly sliced (a Japanese slicer works well)
1/4 Vidalia or red onion, thinly sliced
In a medium sized bowl, combine the vinegar, sugar, and 1/4 teaspoon salt, stirring until the sugar and salt are dissolved. Add the cucumber and onion and toss to combine. Let sit, tossing occasionally, at least 15 minutes and up to 6 hours. Drain and serve.
