Mac and Cheese, Cornbread and Dessert!

Easy delicious recipes you can make this week for your family! Brought to you by Atlantic Appliance.

We know cooking for the family can be a hassle, so we want to make your day just a bit easier.

Here are three easy recipes for a mouthwatering dinner, and of course we couldn’t forget a divine dessert!

  1. EASY MAC ‘N CHEESE

serves 8-10

1 pound elbow macaroni, cooked al dente, according to box instructions

drain and hold in same pot

6 oz shredded cheddar cheese

2 cups whole milk




Bechamel Sauce

In Sauce pot make your ROUX

2 Tablespoons butter

2 Tablespoons flour




On LOW heat melt together with wooden spoon and cook 5 minutes on low heat

In the meantime heat 2 cups whole milk

Whisk in warm milk to roux and whisk until sauce is thickened(needs to bubble on sides of pot)

add salt and pepper tt

Turn off heat

Add cheese and stir with wooden spoon

Add Macaroni

2. EASY CORNBREAD

No need for a mixer

Serve warm or use for Thanksgiving stuffing

1-1/4 cups all purpose flour

¾ cup Corn Meal

¼ cup sugar

2 Teaspoons baking powder

½ teaspoon Kosher salt

1 cup whole or 2% Milk

¼ cup Canola or Vegetable oil

1 egg

¼ cup corn kernels (defrosted frozen or canned)

2 TB chopped dill(optional)




Heat Oven to 375 degrees

Grease an 8 0r 9” square pan or a 9” pie tin




Combine dry ingredients and whisk in amedium sized bowl

Stir together Milk, egg and oil

Stir into dry ingredients until moistened * DO NOT OVER-MIX *

Stir in corn & dill(if desired)




Pour into prepared pan

Bake 20-25 minutes or until toothpick in the center comes out clean




3. SUGAR COOKIES

2 sticks Unsalted Butter

1-1/2 cups sugar

3 cups all purpose Flour

½ teaspoon Salt

1 teaspoon baking soda

4 eggs

1 teaspoon vanilla

Milk for glazing

granulated sugar for sprinkling

Combine butter and sugar and cream in mixer

Add eggs, one at a time and vanilla

Mix flour, salt and baking soda together with whisk

add to wet ingredients

Chill for 1 hour.. Roll out on floured surface using 1/4” high rulers to guide the thickness of cookie

Preheat oven 350 degrees

Brush with milk and sprinkle with sugar Bake

OR brush with egg wash and glaze when cool and dip in sprinkles



GLAZE

for cooled cookie

mix together:

1 cup confectioners sugar

2 teaspoons milk

2 teaspoons corn syrup
