Something Different for Passover

Cornish Hens are a great complement to your Seder brisket or try it on another night.

Instead of the usual brisket for Passover try these tasty Cornish Hens, seasoned with Morrocan spices.  This works well with too.  You can prep these the same way, but these small birds will only need about an hour's worth of brining if you choose to do that. 

I tend to try to stick with recipes that are not matzo based on Passover.  Try some roasted veggies instead of or in addition to your kugel. Do a dessert that uses almond meal instead of matzo cake meal and don't forget to try these.

Cornish Hens with Apricot Glaze

  • 1 tsp pumpkin pie spice
  • ½ tsp cumin, toasted & ground*
  • ½ tsp black pepper
  • ½ tsp ginger
  • ¼ tsp cardamom, opt
  • ½  tsp salt
  • 4 Cornish hens, halved
  • 1 large onion, roughly chopped
  • 2 carrots, roughly chopped
  • 1 8oz jar apricot preserves

Combine the spices and the salt.  Sprinkle the hens on both sides with all but 1 tsp of the mixture.  Place the hens on top of the onions and carrots and bake at 375°F for about 40 minutes.  Combine the preserves with 1 tsp of the spice mixture and spread on the hens.  Bake another 15 minutes or until nicely browned.

*I have found various sources on whether or not cumin is okay for passover and they differ in opinion.  Big surprise.  Use or don't use as your conscience tells you. 

I'll add some pictures as I make this.  Today was brisket day.  (My secret, along with a ton of onions and garlic, add some smoked paprika)
