
Having seven in a family to feed keeps me on my toes. I have tried over the years to make enough that all could have a second helping without breaking the bank. Pasta has become a favorite dish for our family and I wanted to share a dish that is inexpensive to make and a favorite of even our family guests.
I love this receipt even more as it is made in one skillet. I will sometimes serve this with a salad and a loaf or two of Italian bread (which you can get at Wal-Mart in Lexington near the yogurt section) this bread is reduced as it is about to expire in a day or two, but still very fresh if you eat it that day.
I generally triple the recipe and we have plenty.

Barbecued Beef and Mini Bow Tie Dinner

This recipe makes about 4 nice size servings
1 lb ground beef
1 medium red bell pepper chopped (1 Cup) I get my peppers at Aldi’s
1 ½ cups mini bow- ties (mini farfalle)
2 ½ beef flavored broth (32 oz. carton)
½ cup Sweet Baby Rays honey barbeque sauce (I usually add a bit more)
½ teaspoon salt
¼ teaspoon pepper
1 cup of canned corn drained
1 ½ cups shredded cheddar cheese
In 12 inch nonstick skillet, cook beef over medium heat, stirring occasionally until thoroughly cooked and drained.
Add bell pepper, cook and stir 1 minute. Stir in pasta, broth, barbecue sauce, salt and pepper. Heat until boiling, reduce heat to low. Cover and cook 15 minutes, stirring occasionally, until pasta is tender.
Stir in corn and 1 cup of cheese. Top with remaining ½ cup of cheese. Cover; cook 3 to 4 minutes longer, until corn is hot and cheese in melted.
Tips
Store bought beef can be really salty. You may want to try reduced sodium.
To save on the high expense of bagged cheese. When cheddar cheese is on sale buy a block and shred and store in a tightly sealed container in the freezer. It will ready for whenever you need it.
