
I surprised myself with this dish last night. It was easy, and I am pretty sure it will freeze well. I hope you enjoy it.

- 2 large chicken breasts cut in half long ways
- Prosciutto ( about 1/4 cup chopped)
- 1 cup peas (i used frozen)
- 1 cup half & half
- 1 tablespoons
- a dash of salt (for the chicken)
- 1/4 cup flour
- extra v. olive oil
- about 2 cups stock/ or water from the pasta
- 2 eggs
- Penne Pasta 2 cups cooked
How I did it
I put the pasta on and cooked until almost done
In a pan I brown the chicken (salted) in extra v. olive oil & butter. I removed the chicken and added the flour blending in until its balled up or pasty looking. Next add the half & half and mix add in the prosciutto. If it gets to thick add the stock or pasta water slowly while mixing.
In a casserole dish add the chicken. cooked pasta, peas and sauce mixture.
in a bowl beat 2 eggs then slowly add them to the casserole dish.
bake covered at 350 for about 30 mins uncover and brown the top. I dusted mine with parmesan just because...
