Restaurants At Highland Springs Focus on Collaboration and Socialization
Pegasus, the new exhibition-style restaurant and bar opening soon, will feature a stunning, two-story fireplace and outdoor dining.

Caroline Brooks appreciates having eight restaurants to choose from at Highland Springs, an Erickson Senior Living community in North Dallas, Tex. And two more are coming soon!
Each restaurant features its own distinct menu of made-to-order dishes, prepared by professional chefs with the freshest ingredients. "We're especially proud of the variety we offer," says Dining Director Humza Shaikh. "Plus, menus change each month to keep things new and exciting."
More importantly, mealtime provides the opportunity for social connection. Whether gathering with neighbors for dinner, celebrating a special occasion with friends, or inviting loved ones to share a meal, dining is a highlight of life at Highland Springs.

"I look forward to lingering over dinner and long conversations with friends," says Caroline. "Here, dinner is a time to socialize!"

Pecan Stop is the perfect place for a hearty breakfast, as bagels, quiches, baked goods, and yogurt parfaits are on the menu, along with specialty coffees, teas, and juices.
"You can enjoy a petit filet, fried catfish, or chicken cordon bleu at Chisholm's, one of our four elegant, dine-in restaurants," says Shaikh. "Or head over to Reunion Grill for steak Diane, honey-walnut shrimp, or chicken parmesan." Both offer dinner and Sunday brunch.
Another favorite for dinner and Sunday brunch is Table Eighty-Ninety, offering mouth-watering steak bearnaise, New England haddock, and the popular General Tso's chicken. The Crescent Club serves up delectable grilled lamb chops, cod dijonnaise, and chicken kabobs.
Looking for a more casual gathering place before a pickleball match? Check out White Rock Bistro, where burgers, paninis, and Philly cheesesteaks are popular bites, along with other appetizing fare like salads, flatbreads, and deli sandwiches.
Made-to-order burgers, BLTs, and grilled Reuben and Rachel sandwiches--for both lunch and dinner--can be found at Fireside Grille. Catch dinner and a game or cue up for billiards at the Lone Star Pub, where residents enjoy Southwest salad, chili, and bacon-bleu cheeseburgers with handcrafted cocktails.
Five-star experiences
Two new dining venues are set to open soon in Trailside Commons, Highland Springs' newest residence building. Pegasus is a stylish, exhibition-style restaurant and bar featuring a stunning, two-story fireplace and outdoor dining. And Skyline Café will be a grab-and-go spot for busy residents.
With so many restaurants and dishes to choose from, it's hard for Caroline to pick a favorite, though a good hamburger at Lone Star Pub always sounds good to her.
"Creating attractive menus and serving fresh, flavorful food every day takes a lot of hard work and teamwork," says Shaikh. "I am truly grateful to lead a team that cares so deeply about serving our residents. Their passion and commitment are evident in the quality and care they bring to work every day."
Powerful partnership
To ensure residents continue to enjoy high-quality dining experiences, Shaikh and his team partner with the Resident Advisory Council's dining committee to identify strengths and areas of improvement.
As chair of the committee, Caroline is in constant communication with Shaikh to share resident input on the restaurants' service and menus. "Humza and the dining staff are always very responsive to comments and suggestions made by me and other committee members," she says.
For example, Shaikh has heard that residents seem to appreciate when regional cuisine is on the menu. "This is Texas, so residents love our beef taco salad, fajitas, and Tex-Mex catfish," he explains. "They also love the margaritas--a must with good Tex-Mex dishes!"
Receiving this valuable insight also allows the dining team to cater to a range of dietary preferences and needs, including gluten-free and low-sodium options.
Dinner with friends
For Caroline, what really makes mealtime shine at Highland Springs is the vibrant, social atmosphere--and not having to clean up after.
"I really enjoy eating at different restaurants with different groups of friends each evening," says Caroline. "Plus, someone else cooks and cleans up afterward!"
