No Undercooked Burger Warning On Menu At Arlington Eatery: Inspections
Arlington County Public Health inspectors reported finding health code violations at 19 restaurants they inspected July 1-8.

ARLINGTON, VA — Arlington County Public Health Department inspectors visited 40 food establishments July 1-8 and found health code violations at 19 of them.
At one restaurant, an inspector reported that there was no reminder statement on the menu about ordering a burger undercooked. Restaurants must include a disclosure on their menus about the potential dangers of consuming undercooked animal-derived foods. A menu must include a statement:
- "Regarding the safety of these items, written information is available upon request;
- "Consuming raw or undercooked meats, seafood, shellfish, or eggs may increase your risk of foodborne illness; and
- "Consuming raw or undercooked meats, seafood, shellfish, or eggs may increase your risk of foodborne illness, especially if you have certain medical conditions."

Corrective Actions: The quaternary ammonium sanitizer used in this facility shall have a minimum concentration of at least 200 ppm OR a concentration between 150-400ppm based on the manufacturer's use directions and using the appropriate test kit.
- Observed single-use beverage cups and lids and single-use utensils stored under the handwashing sink. Corrective Actions: Cleaned and sanitized equipment, utensils, laundered linens, and single-service items may not be stored in: 1) locker rooms, 2) toilet rooms, 3) garbage rooms, 4) mechanical rooms, 5) under sewer lines that are not shielded to intercept potential drips, 6) under leaking water lines including leaking automatic fire sprinkler heads or under lines on which water has condensed, 7) under open stairwells, or 8) under other sources of contamination.

What Violations Do ACPHD Inspectors Report?
In Virginia, all food service locations are supposed to be inspected at least once per year. Facilities with higher risk factors may be inspected as often as four times per year, according to the Virginia Department of Health.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected. Sometimes, the follow-up inspection only considers the most important "priority" violations.
For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Depending on the results of the inspection, the health department can pursue several actions.
They can issue a permit for the restaurant to continue serving food, they can schedule a follow-up inspection to determine if violations have been rectified, or they can temporarily shut down an establishment until certain issues are solved.
The Virginia Department of Health only recommends restaurants have their permits suspended when "the continued operation of the food service presents a substantial and imminent threat to the public health."
