FAIRFAX, VA — Fairfax Health District officials recently inspected food preparation and storage in the area. Full reports can be accessed on the health department's website. "In our experience, it is unrealistic to expect that a complex, full-service food operation can routinely avoid any violations," according to Virginia Department of Health's website.
Violations noted below — such as raw ground beef at Smashburger being stored 14 degrees above what's permitted (see note below) — involve those issues that would typically require a re-inspection if not corrected or those that are more likely than other violations to contribute to food contamination. They're divided into two categories:
Priority Observations are those violations such as improper cooking, reheating, cooling, or handwashing. These violations are known to cause food-borne illnesses. Uncorrected priority observations usually result in a re-inspection.

Critical violations are are food regulation violations which, if left uncorrected, are more likely than other violations to directly contribute to food contamination, illness, or environmental degradation.
"No priority or critical violations" means that other violations were noted, but do not require re-inspection.

"No items found" means no violations were noted for the establishment, according to the health department.

Food stored inside the Delfield 4DWR Refrigerator @grill station: a. Black bean burgers: 51f, b. Sliced cheese: 54f, c. Raw hamburgers: 55f.
"Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. DISCUSSED WITH MANAGEMENT PROPER COLD FOOD TEMPERATURES. FOOD WAS DISCARDED."
