Unpasteurized Eggs Found In 2 Fredericksburg Food Facilities: Inspection Report

FREDERICKSBURG, VA — Rappahannock Area Health District inspectors reported finding violations at 24 of the 27 food establishments they visited Feb. 2-13.

During a Feb. 11 visit to Spring Arbor of Fredericksburg (Willow) and Spring Arbor Cottage of Fredericksburg (Cypress), inspectors noted that there were were no pasteurized eggs in either facility. There were only raw shell eggs, which were being used for more than just baking and single egg preparation.

"Pasteurized eggs are needed for recipes in which more than one egg is broken and the eggs are combined," inspectors wrote in their reports. "Also, if raw eggs are used to prepare foods that will not be cooked thoroughly. The person in charge will use the non-pasteurized shell eggs for baking and single egg preparation only. The person in charge ordered pasteurized eggs but was given non-pasteurized eggs. They will speak to the supplier and obtain pasteurized eggs."
