MANASSAS, VA — A restaurant in Manassas recorded 12 violations during a recent inspection from the Prince William Health District.

- The person in charge did not demonstrate their knowledge of correct procedures for cleaning and sanitizing utensils and food-contact surfaces of equipment.
- There is no person in charge with a valid Food Protection Manager Certification from an accredited agency recognized by the Conference for Food Protection.
- Employees and conditional employees are not aware of the reporting procedures concerning information about their health as they relate to the symptoms caused by illness, infection, or other source that is associated with an acute gastrointestinal illness or a lesion.
- Establishment is unable to provide procedures for employees to follow when responding to vomiting or diarrheal events.
- First handwashing sink at kitchen entrance requires a sign.
- Both handwashing sinks were being used to hold/wash kitchen utensils/storage bin.
- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Raw chicken observed/measured @ 50? - located in reach-in-refrigerator.
- Unlabeled food containers that are not easily identified by appearance: Person in charge was not aware what was in the container.
- Food being prepared/stored on trash receptacle. Food contact surfaces (trays) in contact with trashcan and stored too close to 3 VAT sink (splash contamination).
- The chemical sanitizer was too weak. Cycled HOBART unit twice in order to test the chlorine solution and it would not reach appropriate ppm.
- Prep-table bottom is covered in foil in attempt to keep food debris, dirt, grease, dust, rust and other debris from contaminating food contact surfaces/utensils being stored on surface.
- Wall/Ceiling in kitchen (grill area specifically) coated in grease/food contamination/dirt. Wall behind food prep station 1 coated in grease/food contaminates/dirt.
